This simple recipe is fantastic for those “Where’s the beef” nights. Open a can of baked beans, get some prepared cole slaw and you are set for a finger-licking good meal. Or provide loaded baked potatoes with all the accompaniments for fun if you have more time.
The best part of about this recipe is the long slow cook time. It gives you plenty of time to go to work, class or do all those “in the car” things we all have to do each week.
It takes only a few minutes of prep – and everything is placed in the slow cooker and off you go.
Note that you can choose to add a 1/2 cup of beer or chicken stock instead of the water for more flavor if you like.
When you return, finish the ribs with a little help from a bottle of barbecue sauce and your oven. It only takes about 10-15 minutes and that gives you time to get the rest of the dinner together.

SLOW COOKER BABY BACKED RIBS
3 pounds baby back ribs, trimmed
salt and ground black pepper, to taste
1/2 cup water, beer or chicken stock
1/2 onion, sliced
1 clove garlic, minced
1 (18 ounce) bottle barbeque sauce
Season ribs with salt and pepper.
Pour water into slow cooker. Layer the ribs into the slow cooker. Top the ribs with onion and garlic.
Cook on High for 4 hours (or Low for 8 hours).
Preheat oven to 375 degrees F.
Transfer ribs to a baking sheet. Discard onion and garlic. Coat ribs with barbeque sauce.
Bake in preheated oven until the sauce caramelizes and sticks to the meat, 10 to 15 minutes.
